This is a simple version of tomato rice.I generally make it spicy because I love it that way.
Garlic cloves-4-5 chopped
Mustard seeds-1 table spoon
Chana dal-1 table spoon
Urad dal-1/2 table spoon
Turmeric powder-1 tea spoon
Garam masala-1 tea spoon
Chilli powder-1 table spoon
Sambar powder-1/2 table spoon
Curry leaves- for seasoning
Corriander leaves- for garnishing
Basmati Rice- 1 cup
1.Heat a pan, pour about 2 table spoons of oil.
2.Add mustard seeds, chana dal, urad dal, curry leaves, green chilly, red chilly, garlic pods.Fry until they become light brown in colour.
3.Add chopped onions, fry until light brown colour.
4.Add diced tomatoes.Fry for a few minutes.
5.Add turmeric powder, garam masala, sambar powder, chilli powder and salt.
6.Add little water if necessary and cook until the masalas give away their raw smell and a mushy mixture is formed.
7.Remove from pan once the consistency is formed.
8.Wash 1 cup rice and keep aside.
9.Add the tomato masala mixture to the washed rice.Add about 2 cups of water, salt if necessary, and cook the rice either in a vessel on stove or in the rice cooker.
10.Once done, add corriander leaves and serve with any raita.
Ps:I prefer a one pot cooking, and hence make the mixture and add it to washed rice and cook it in the rice cooker.Alternatively, you can cook the rice first and add the mixture later. Most times, I also fry the rice (after cooking) for a few minutes. It adds to the texture and taste of the rice.
