Been a while since I baked anything.And the last time I went to my sister’s place in CA, I picked some recipes from some of the books she had and these cookies were one of them.Never really thought rosemary in a sweet cookie would taste this good.The whole house smells of this wonderful herb.
Unsalted butter-2 table spoon
Sugar-4 table spoon
Grated rind of 1 lemon
Lemon juice-4 table spoon
Finely chopped rosemary-2 tea spoon
All purpose flour-1 3/4 cup
Sugar- for sprinkling
1.Grease 2 cookie sheets and set aside.
2.Cream butter and sugar in a bowl.Add lemon rind, lemon juice and egg yolk, beating until combined.
3.Stir in fresh chopped rosemary.
4.Add sifted flour.Mix well until a soft dough like consistency is formed.Wrap and chill for 30 minutes.
5.On a lightly flavoured surface,roll the dough and cut the cookies into the desired shape that you want. ( I donot yet owna cookie cutter, hence simply used a small cap/lip to cut the cookies)
6.In a small bowl,beat the egg white.Gently brush the egg white over the surface of each cookie.Sprinkle super fine sugar on top.
7.Bake @ 350 degrees F for 15 minutes.
8.Cool in a wire rack and store in an air tight container.
